The flowers of this plant are very distinctive: large, usually bright yellow, with large flower heads (up to 30 cm in diameter). This interest is actually a compound interest, composed of hundreds to thousands of small flowers on one head.

Sunflowers also have a distinctive behavior, namely that they are always facing / leaning toward the sun or heliotropism. The French call it tournesol or “traveler of the Sun”. However, this trait is removed in new cultivars for oil production as it consumes a lot of energy and reduces yield.

Sunflower is the national flower of Ukraine and the official flower of the state of Kansas, United States of America.

Sunflowers are annual herbaceous plants originating from northern tropical America (Mexico), 3m to 5m high depending on the variety. Single leaf wide. The trunk is usually covered with coarse, erect, rarely branched hair.

Compound interest. There are two types of flowers: the margarine or tongue flower which carries one large, bright yellow sterile petal, and the tubular flower which is fertile and produces seeds.

This tube flower number can reach 2000 buds in one flower bunch. Pollination is open (cross) and assisted by insects. On a clear day, bunches of compound flowers follow the daily movement of the Sun (from which the plant is named), the symptoms of which are called heliotropism. Plants benefit 10% more photosynthesis due to this movement.

The fruit is of the type of brackets (achene). This dry fruit with a rather hard and not too thick wall is often mistaken for a sunflower ‘seed’, because it cannot be easily distinguished. The real seed lies inside, protected by the shell-like fruit.

To grow well, sunflowers need full sun. They do best in fertile, moist, well-draining soil. In commercial planting, seeds are planted 45 cm apart and 2.5 cm (0.98 in) deep.
Dwarf, or sunflower seeds, are sold as raw snacks, or after baking in the oven, with or without added salt and / or seasonings. Sunflower can be processed into an alternative to peanut butter, sunflower jam.

In Germany, sunflower seeds are mixed with rye flour to make Sonnenblumenkernbrot (sunflower seed bread), which is quite popular in Germany. These flower seeds are also sold as food for birds or can be used directly in cooking or salads.

Native Americans used sunflower seeds for various purposes, such as in bread, medical ointments, dyes and body paint.

Sunflower oil, which is extracted from the seeds, is used for cooking. Sunflower oil is also used to make margarine and biodiesel, because it is cheaper than olive oil.

Each sunflower variety has a different fatty acid composition; some “high-oleic” types contain higher levels of monounsaturated fat in their oil than olive oil. This oil is also sometimes used in soap
